Kate's Favorite Recipes-Power Pancakes!

It’s the new year and most of us have resolved to eat healthier and better this year.  With that in mind, I thought I would share a really easy and healthy breakfast idea that Tony and I like.  It came to me from a trainer at the Ultimate U Fitness Center.  They taste like a combination of french toast and pancakes.   It’s loaded with protein, complex carbs and little fat.  Power pancakes are a great start to any day!

Power Pancakes

1 cup of lowfat cottage cheese (I use 2%)

1 cup egg whites

1 cup of raw oats (I use Old Fashion Oats)

1 tsp vanilla

1 tsp cinnamon 

Combine all ingredients in a blender and blend until smooth.  Yes, the oats will become fine like a coarse flour.  To cook, spray a griddle with cooking spray, and pour pancakes (doesn’t matter if they are large or small).  Cook just like a pancake; turn when edges are cooked and center bubbling and cook on other side.  Can refrigerate unused batter for another day – just blend and cook.  

Serve with a light sprinkle of powdered sugar, jam, fresh fruit, or lite syrup.

Note:  Each serving is 150 calories (without toppings) and 16 grams protein, 15 grams carbohydrates, and 3 grams of fat
